On Sharpening the Japanese Way

One of the many benefits of being my co-worker is that I sharpen kitchen knives to a hair-splitting quality on request, no matter how beat up or crummy the knife is. Sharpening knives is a source of relaxation, a meditative process for me. I own only a few knives myself, so I constantly ask my co-workers and friends for knives to sharpen.

I can track my fascination with sharpening back to the Soviet Union, to the period in 1988, during Perestroyka, when we got a glimpse of foreign TV shows. As a part of “opening up” instad of the usual 3 channels with nothing on we got a major treat – several “weeks of foreign TV.” The show that stuck in my mind forever was from the week of Japanese TV. There was a one or two hour segment about Japanese craftsmen that paired people who made tools with people who used them. There was a segment about a maker of fishing rods and a fisherman and maybe a few other segments. The one segment that shocked me was about a sharpening specialist.

The point of the segment was to bring one of the best Japanese sharpening stones to a sharpening specialist and see what he could do with it.

Japanese blade technology and sharpening methods developed separately from the European ones. Japanese blades are ground to have a complex asymmetrical geometry with one convex side and one flat/concave side. This flat side allows for a level of sharpness similar to a double concave geometry found in European-style razor blades (which are impractical for anything other than shaving), while making the resulting blade much more sturdy. Thousands of years of trial and error also found the ultimate tool for sharpening Japanese steel – a range of soft sedimentary stones formed under tremendous pressure in ancient mountains. There are man-made sharpening stones made of clay, various oxides, and even diamond dust, but the grain size is too consistent – for a variety of reasons nothing can beat a high quality natural stone.

In the TV show that I mentioned earlier they went to a producer of very high quality stones 1. Natural stones that are large enough and don’t have any inclusions of wrong minerals are rare and expensive. A top quality stone might cost many thousands of dollars, maybe even tens or hundreds of thousands 2. The stone merchant/manufacturer produced a family heirloom – a huge and priceless top quality stone which was taken to the sharpening specialist.

The sharpening specialist was amazed at the quality of the stone. He spent a while examining it and making a fuss about the size and the quality. Then he said that he would sharpen a plane blade so that the wood shaving taken with the plane would be completely transparent, only a few micrones thick. He used a series of rougher stones 3 and then switched to the super-stone. Before he started, he needed to prepare it. He used a smaller stone to build up a slurry, and after a while the surface of the large stone became so smooth that the small stone stuck to it and had to be removed with the help of a splash of water. The molecules of the two stones actually intermingled and were held together by Van der Waals force.

Then the craftsman sharpened the plane blade to the point that the flat side of it stuck to the stone the same way the small stone did before. Molecules of metal seeped into the super-flat surface of the stone, and again the craftsman had to splash some water on the blade to separate it from the stone.

The knife was placed into a plane, and the resulting wood shaving was transparent: you could read a newspaper through it. But the craftsman was not satisfied – he resharpened the knife again, and took off an even thinner shaving.

Many years later I purchased a set of Japanese waterstones and a few Japanese knives. I also bought a Western book about Japanese waterstones that was full of misinformation. I only learned how to use the stones properly when I started working at 7 World Trade Center. There is a small restaurant supply store called Korin that is partially owned by a master knife sharpener, Mr. Chiharu Sugai. He has a full sharpening workshop set up in the store and sells a DVD about sharpening. Only after watching the DVD and watching Mr. Sugai work during my lunch break did I get a bit better at sharpening with water stones.

I don’t have a workshop, but I have a healthy collection of man-made stones (same ones that Mr. Sugai uses). I use a wooden board that fits over the sink to rest the stones on, which is easier for me than sitting correctly. These days I can sharpen a knife to a point where it can split a hair held by one end. My technique is far from perfect, but I am getting better. Sharpening provides an extremely calming activity for me, there’s something meditative in ultra-precise repetitive motions that require a lot of focus.

I think the source of my fascination with sharpening is philosophical. You start out with a piece of metal that isn’t that sharp and a piece of stone that is completely dull, and through a very precise set of actions produce a piece of metal that has an edge only a few microns thick that is capable of breaking inter-molecular bonds, of cleaving solid matter.

Having a well-sharpened knife in the kitchen is amazing. I personally believe that it’s not only easier to cut food with a sharp blade, and not only food cut cleanly looks better, but also that it tastes better. A salad cut with a sharp knife is somehow tastier, and so is meat and fish.

The old bromide about a dull knife being more dangerous than a sharp knife is only partially true. A sharp blade is very dangerous and needs to be treated with respect. If you’ll place a sharp knife into a sink and then reach for it with your hand you’ll get a deeper cut. If you force it past a tough vegetable into your hand you’ll also get a worse cut. The thing is, if you do dumb things with any blade you’ll get hurt, and a sharp blade with cut better. But sharp blades inspire respect: you will simply stop doing stupid things like leaving them in sinks or cutting towards any appendages that you want to keep. 5.

Ukraininian Sushi

Spyware and construction contractors are very bad for my health. For instance, recently, the contractor who renovated my apartment asked for my help with cleaning out yet another spyware infestation. To express his gratitude he gave me a present that his sister brought with her from her trip to Ukraine. A piece of genuine Ukrainian salo.

Salo is an Eastern European staple that for some strange reason is virtually unknown in the West. Wikipedia describes it as salted slabs of pork underskin fat. It’s not really bacon – salo mostly consist of unrendered fat (bacon has more meat) and can be eaten raw.

If you’ve never had salo, it’s most similar to the taste and texture of little pieces of fat found in some harder kielbasas. In its fried form salo resembles bacon and pork rinds, except it’s much tastier. Also, you really can’t make exceptional borscht or fried sunflower seeds without high quality salo.

Here’s a piece (Ukr. “shmatok”) of salo on my official Jamie Oliver cutting board. I used my sashimi knife to cut it into thin slices – the best way to eat, in my opinion.

It’s kind of hard to describe the taste and texture of Ukrainian salo. The texture of it is hard, yet it melts on your tongue. It’s salty, fatty, garlicky. Your caveman instincts make your brain fire “wow, inhale this right now” messages, yet the little Surgeon General in your head tells you “wow, this will clog up your arteries good.” They don’t call salo “Ukrainian cocaine” for nothing.

The little Surgeon General in your head is wrong, though. Having come into possession of this authentic salo for the first time in years, I just had to kick it up a notch and make the _ultimate_ in unhealthy treif food. I had to make the legendary confection – “salo in chocolate”.

This confection started as a joke playing on Ukrainians’ fondness of salo. Then some Russian and Ukrainian restaurants started making it as an exotic delicacy. Then someone started to make a candy bar of that name. The Wikipedia article has more on that.

I tempered some good semi-bitter chocolate and dipped thin slices of salo into it.

The flavor is outstanding. Chocolate goes well with salty, fatty salo. It tastes as good as it is unhealthy. Overall, though, the quantity that I made is probably no worse than a movie theater popcorn or the bun of death from the vending machine at work. In fact, probably healthier.

If you are curious, you can find salo in most Russian food stores in New York. It will probably be lower quality Canadian salo, but it will give you a pretty good idea.

The Martha and the other Jamie.

I was watching The Apprentice: Martha Stewart and noticed that The Martha has a pretty nice espresso setup in her kitchen. There’s a two-group commercial machine, not a La Marzocco Linea (wow, you can pick one up at Amazon these days) or Synesso Cyncra, but still a pretty serious piece of machinery. There’s a commercial grinder that I can’t identify, as well as smaller grinder, probably for decaf, that looks like a $500 Pasquini Moka.

Jamie Oliver, on the other hand, used to have a cool looking, but crummy FrancisFrancis! machine. Luckily, unlike with espresso machines, you don’t need a very expensive knife to do food prep like a pro. Jamie, for instance uses a decent, but inexpensive Twin Signature chef’s knife. He uses a few other knives, but the exat brands and models are a subject of heated discussion

The Naked Barrista

I haven’t written about one of my very expensive but ultimately rewarding hobbies for a while, so I will try to correct this. You see, I like espresso and espresso based drinks. One of these days I’ll write a long post about everything that I ever learned about making them, but for now, here’s a short progress report.

There are hundreds of cooking shows these days. Even the British, famous for their indigestible cuisine, field two awesome shows: The Naked Chef and Ramsay’s Kitchen Nightmares. All of a sudden, London is referred to “City of Chefs.” In any case, I am sure that both Jamie Oliver and Gordon Ramsay prepare very tasty meals in their restaurants. But I am also pretty sure that if you order an espresso or a cappuccino there, you’ll get the undrinkable crud. Jamie Oliver, for instance has a FrancisFrancis! – a beautifully designed, but highly mediocre espresso machine in his home kitchen. Would one show about coffee and coffee training for celebrity chefs and their restaurant staff be too much to ask for?

As my financial means increased, I’ve progressed through a series of espresso machines. For a year or so I’ve been a proud owner of a Reneka Techno. It’s a common choice amongst espresso enthusiasts who always wanted a La Marzocco machine, but finally gave up, as new ones cost too much (around 6K) and used ones are hard to come by and troublesome. The scarcity of used La Marzocco machines is a mystery to me – Starbucks replaced almost all machines that it used to own with superautomatics of unknown to me make, reportedly forcing the closure of the US La Marzocco factory. Where did they all go?

Anyway, strange as it is, but a French company, not an Italian one is making a machine that mostly replicates a La Marzocco for home users. So, what separates this machine from hundreds of competing espresso makers?

Well, for starters it uses a rotary pump instead of the most common vibratory one. Rotary pumps give a steady pressure, unlike vibratory ones that provide the same pressure in a series of very rapid pulses. This is similar to analogue vs. digital sound, and just slightly less controversial, as the results are easier to compare. For the record, I like analog sound better too.

The second highly desirable feature is the separate high powered steam/water boilers. Add to that a digital temperature control circuit tunable to 1F and you got yourself a great machine. With this little bit of digital trickery you get in-boiler temperature stability that the bigger machines get through great size and painstaking adjustment. The temperature stability at the group (the coffee holder) is another question altogether, but it’s not bad there too.

Of course, to get all that you have to suffer some difficulties – like having a 220V outlet installed. This is not too difficult – you just need to have access to two 120V lines on a different phase and have your electrician put in a special circuit breaker. You also need a direct water connection, as rotary pump machines don’t have water tanks and need to take in water at water line pressure. This is not too difficult as well – you need to have your plumber to lead a flexible copper water line from the sink. If you install the machine near the sink, you can also tie the coffee machine’s drain into the sink drain. I am not as lucky – my machine drains into a big vase.

Here is my Reneka Techno with the side cover removed. You can see the pump as well as the badly placed pressure gauge. Pressure is adjustable, mine is set at about Schomer-recommended 8.5 bar.

A new trend in espresso shot-pulling is the so-called naked portafilters. Techno came with an extra portafilter, which I had modified at Home-Espresso.com for only $25. The idea is that you get to see the cream formation and flow of espresso though the filter bottom, noting the evenness of extraction. Also, crema touches fewer surfaces, ending up mostly in the cup.

I’ve ordered some coffee from Victorola, this is a shot of their Streamline Espresso. The crema looks a little light, but espresso did not taste sour at all. Is that the mysterious “tiger flecking“? I don’t know. In any case, this was a trial shot, I’ll keep playing with my new toy and new coffees from Victorola.

I am sad to announce my continuing suckage at the fine craft of latte art. Look and laugh at this misshapen rosetta. Ewww. Well, practice makes perfect.

Serious espresso making requires serious reading. David Shomer’s book is a classic that must be read by every aspiring barrista. Espresso Coffee : The Science of Quality by Rinantonio Viani, Andrea Illy (yes, that Illy) is a sophisticated scientific and scholarly work about espresso. It’s expensive at seventy something dollars. But when you spend that much on coffee machines, coffee accessories and coffee, what’s 70-80 bucks more for a good book?
